# One Iowa Fire Takes Out a Large Share of American Kosher Meat

A fire that began on Tuesday 29 July destroyed roughly 75 percent of the AgriStar Processing plant in Postville, Iowa, and put more than 600 people out of work. Investigators ruled the cause accidental the following day, originating in the facility's laundry room. The plant is owned by the Canadian businessman Hershy Friedman.

The consequence runs well past Postville. AgriStar is a significant source of kosher beef and chicken for the American market, and a single site accounting for that share is the definition of a supply chain with no slack in it.

OU Kosher, the Orthodox Union body that supervises certification, moved quickly to the second order effect. Rabbi Moshe Elefant, its chief executive, warned that scarcity creates an opening for people willing to profit by misleading kosher consumers, which is a fraud problem rather than a shortage problem and needs a different response.

Fire Chief Jeff Bohr handled the response locally, and Jarad Bernstein of the Jewish Federation of Greater Des Moines spoke to the community impact. Postville is a small town where a plant of this size is not one employer among many.
